Arrowroot Coconut Chicken

  • Serves: 4 people
  • Prep Time: 40 minutes



  1. Heat the 3 tablespoons of coconut oil and pan fry your onions until translucent, add your arrowroot and fry for 5 minutes.
  2. Add 1 cup of water and allow to evaporate, add coconut milk and another cup of water.
  3. Add your chicken thighs and allow to cook for 30minutes and turn after 15 minutes.
  4. Just before serving add french beans and allow to simmer on low for 5 minutes.
