Baked Italian Vegetables

Directions

  1. Layer your vegetables in a casserole dish, starting with the eggplant and ending with the onions.
  2. In a bowl mix the ketchup, sweet chili, dried herbs, vinegar and oil
  3. Sprinkle over the vegetables and bake for 35 minutes at 180 degrees.
  4. Serve Hot.
