Baked Matoke

  • Serves: 1
  • Prep Time: 45 minutes



  1. Bake the matoke in the oven with the skin still on for about 35 min.
  2. Remove them from the oven, and peel, cut roughly.
  3. In a separate pan, fry onions until they start to brown add garlic and fry alittle longer and set on low.
  4. Add the matoke and toss with a tablespoon of water.
  5. Add the coriander last and toss for another 2 minutes.
  6. Serve hot alone or with an accompaniment
