- Prep Time: 45 minutes
- Bake the matoke in the oven with the skin still on for about 35 min.
- Remove them from the oven, and peel, cut roughly.
- In a separate pan, fry onions until they start to brown add garlic and fry alittle longer and set on low.
- Add the matoke and toss with a tablespoon of water.
- Add the coriander last and toss for another 2 minutes.
- Serve hot alone or with an accompaniment
