Banana and Lemon Loaf

  • Serves: 4 people
  • Prep Time: 50 minutes



  1. In a large bowl mash your banana with the sugar, add your lemon juice, butter and yogurt and mix until smooth.
  2. Add your eggs, lemon zest and mix to incorporate.
  3. Add your flour and using a wooden spoon mix thoroughly ensuring no lumps are formed.
  4. Pour into a greased baking tray or a silicone mold and bake in the oven at 180 degrees centigrade for 40 minutes.
  5. Remove and allow to rest and cool then serve.
