- In a large bowl mash your banana with the sugar, add your lemon juice, butter and yogurt and mix until smooth.
- Add your eggs, lemon zest and mix to incorporate.
- Add your flour and using a wooden spoon mix thoroughly ensuring no lumps are formed.
- Pour into a greased baking tray or a silicone mold and bake in the oven at 180 degrees centigrade for 40 minutes.
- Remove and allow to rest and cool then serve.
