  1. In a large bowl mix all the dry ingredients together
  2. Create a well and add the water and mix thoroughly ensuring most lumps are gone
  3. add the garlic, ginger and coriander and mix before adding the sliced potatoes
  4. Heat 6 cups of cooking oil and once hot add the potatoes from the batter and allow to fry until golden.
  5. Serve hot with kachumbari sauce.
