- Fry the red onion until browned, add the spices and toast for a minute or so.
- Add the tomatoes and the tomato paste allow to cook for 5 min until they for a thick sauce
- Add black beans and coat evenly.
- Add 1 ½ cups of water and add the rest of the vegetables in the water.
- Boil down until consistency is thickened, once ready turn off heat.
- Add coriander and serve hot.
