- In a large bowl incorporate the spices, flour , salt, egg yolks, 1/4 cup of water and buttermilk and make a batter.
- Whisk the egg whites until fluffy and stiff.
- Fold int the batter into the egg whites until fully incorporated, add the fish fingers and ensure submerged.
- Heat 5 cups of oil and place each finger into the oil and fry until golden brown.
- Serve hot, with lemon wedge.
