Cajun Chicken Salad

  • Serves: 4 people
  • Prep Time: 30 minutes



  1. In a pan heat 3 tablespoons of oil and sprinkle 1 pinch of cajun spice on the pan and pan-fry your chicken and sprinkle another sprinkle cajun on the chicken.
  2. Add your onion, and capsicum and continue to pan-fry for 10 minutes.
  3. Put into another bowl and add the tomatoes and a little extra olive oil for flavour, mix well and place over shredded lettuce.
  4. Add your home made mayonnaise and serve.
