- Blanch your potato wedges in the boiling water and set aside.
- Heat your 1.5 litre oil and deep fry the potatoes until slightly browned and crispy, set them aside.
- In a large pan melt your butter and add your red onions and cook down until slightly browned.
- Add your cajun spice and cook until aromatic.
- Add your potatoes and mix well, add your coriander and do the same.
- Serve hot.
