Capsicum Coconut Rice

  • Serves: 4 people
  • Prep Time: 40 minutes



  1. In a large pot heat 4 tablespoons of coconut oil and cook your onions and red capsicum and cook until slightly browned.
  2. Add your garlic, ginger and spices and mix well, add your beef and cook until sealed, add your beef cube and mix.
  3. Add your water and coconut milk and allow to come to the boil, add rice and cook until liquid has evaporated.
  4. Cook until rice is cooked, and then serve.
