- In a large pot heat 2 tablespoons of oil and the butteradd your onions and cook down until they start browning.
- Add your spice mix, green chilli, chicken cubes and tomato paste and toast for 20 minutes on low.
- Add your rice and cook it for 10 minutes before adding the boiling water, cover and allow the rice to cook through.
- Just before serving break your eggs over rice and cover and allow to cook for 10 minutes on low.
- Serve immediatley.
