Egg Curry Rice

  • Serves: 4 people
  • Prep Time: 45 minutes



  1. In a large pot heat 2 tablespoons of oil and the butteradd your onions and cook down until they start browning.
  2. Add your spice mix, green chilli, chicken cubes and tomato paste and toast for 20 minutes on low.
  3. Add your rice and cook it for 10 minutes before adding the boiling water, cover and allow the rice to cook through.
  4. Just before serving break your eggs over rice and cover and allow to cook for 10 minutes on low.
  5. Serve immediatley.
