- Blanch your potato wedges in the boiling water and set aside.
- Heat your 1.5 litre oil and deep fry the potatoes until slightly browned and crispy, set them aside.
- In a large pan melt your butter, add your garlic paste, season the garlic and butter mix and cook until aromatic, add your coriander and mix lightly.
- Add your potato wedges and toss well. Serve hot.
