Green Thai Veg Rice

  • Serves: 3 people
  • Prep Time: 30 minutes



  1. In a large pan heat the coconut oil and fry the garlic paste, mushrooms and green curry paste ensuring its cooked and aromatic.
  2. Add the rice and mix lightly, season well with salt.
  3. Add your coconut milk and water then allow to cook down until rice is cooked.
  4. Add the assorted vegetables and mix through, add 1/3 cup of water and allow the steam to aid in cooing the veg.
  5. Serve hot.
