- In a large pan heat the coconut oil and fry the garlic paste, mushrooms and green curry paste ensuring its cooked and aromatic.
- Add the rice and mix lightly, season well with salt.
- Add your coconut milk and water then allow to cook down until rice is cooked.
- Add the assorted vegetables and mix through, add 1/3 cup of water and allow the steam to aid in cooing the veg.
- Serve hot.
