Hearty Veg Salad

  • Serves: 2 People
  • Prep Time: 25 minutes



  1. In a large pan heat 2 tablespoons of oil and add your onions and capsicum and allow to caramelize lightly.
  2. Add your carrots and spring onions next and allow to cook down, season evenly and set aside and allow to cool.
  4. mix all ingredients of the dressing and set aside.
  5. SALAD
  6. On a large plate, place your baby spinach, feta cheese and strawberries on one side, place your cooked vegetables on the other side.
  7. Sprinkle over generously with dressing, and then serve.
