- In a large pan heat the oil and cook the onions until translucent, add garlic, red chili and spices and cook down for 6 minutes
- Add ginger paste and mix well, add your tomato paste and mix in and lower the heat and allow to become browned lightly.
- Add your tomatoes and season with 2 generous pinch of salt, cook down until slightly broken down, place in a blender and whizz.
- Store in the fridge.
