Matoke Curry

  1. Panfry Onions until translucent add the spicy green paste and allow to brown slightly.
  2. Add the spices and lower the heat to allow toast.
  3. Add the matoke and fry and ensure the spice mixture coat it evenly.
  4. Add the three tomatoes, roughly chopped and add them fry until tomatoes are soft add 1 ½ cups of water and simmer on low for 35 min.
  5. When matoke has cooked through add the chopped coriander
