Pineapple and Cucumber Salad

  1. In a large bowl, mix your balsamic, honey, ginger and oil together,add your cucumber, pineapple, chia seeds, poppy seeds and coriander.
  2. Mix well and set aside to marinate slightly.
  3. Assemble your salad by placing your lettuce at the base, add your marinated pineapple and cucumber over the lettuce and pour excess dressing all over the meal.
  4. Pour toasted seeds over and serve.
