Pumpkin Salad

  • Serves: 2
  • Prep Time: 40 minutes



  1. Combine ginger paste, onion, sugar and butternut and oil, place on a baking tray and bake at 160 degrees for 45 min or until butternut is cooked through
  2. Remove from oven and set aside to cool.
  3. After cooled combine the rest of the ingredients and chill.
  4. Serve chilled.
