- Using a fork poke holes all round your potato, place in the wet kitchen towel and place in the microwave for 10 minutes.
- After microwaving, cut an x into your potatoes and squeeze the sides until they shape outwards.
- Take your whipping cream and whip it till fluffy, add the zest and juice and fold in lightly, a crack of black pepper.
- Place a dollop on top of your potatoes and serve.
