Rice Stuffed Hoho

  1. In a bowl place the yellow capsicum the cherry tomatoes and the red onion and garlic
  2. Coat evenly and season place on a baking try skin side up
  3. Bake in the oven for 45 min at 180 degrees
  4. After 45 min, in a separate bowl put rice carrot and egg and mix well, add baked tomatoes, onion,garlic and mix.
  5. Turn yellow roasted capsicums on the skin side down and put the rice mixture and bake in the oven for another 15min
  6. Serve hot
