Spicy Red Snapper

  1. In a large pan heat 2 tablespoons of oil, season lightly with salt and pepper and panfry the red snapper until browed.
  2. Sprinkle over with 11/2 tablespoons cajun spice and add the water and the rest of the cajun.
  3. Add the butter and baste over the fish, serve hot with salad.
