This is something to serve on a beautiful Sunday, and maybe, just maybe you're not too bogged out about Monday blues, and you're hosting a couple of friends. No, your friends and family at the same time.
In a pot, add 2 tablespoons of olive oil and the butter, start by frying the spring onions for about 1 minute, add the red onions and fry for another minute
Add the garlic and shortly after, the shredded spinach.
Allow to wilt or add 1/4 cup of boiling water.
After wilting, set aside to cool.
In a seperate bowl, whisk the eggs, the cream and the chili, with a pinch of salt and a pinch of black pepper, whisk thourougly.
Add the spinach mix and mix evenly.
In a baking tray of your choice, line the sides with the tomato slices and add the egg and spinach mixture.
Place in the oven at 180 degrees for 35-40 minutes.
Remove from the oven and allow to cool for about 10 minutes and then serve warm.
