Malenge!!! Huh, most of us really don’t like the taste of pumpkin and more often than not, consider it as a delicacy for weaning babies. But it’s just because we refuse to get adventurous with them!!! Loosen up a bit and try out this yummy Swahili Malenge Soup:
Pan fry peeled and cubed butternut.
In a separate sufuria /pot add oil, a crack of black pepper and a sprinkle of salt then add roughly chopped onions, coriander stalks and whole spices.
Allow to cook until translucent.
Add the ginger and garlic paste, allow to cook then add the chicken cubes.
Add fried butternut, mix slightly until all the contents are evenly mixed.
After simmering for 30 minutes, add coconut milk and allow to simmer for another 10 minutes.
Finally add freshly chopped coriander and allow to simmer for 5 minutes.
