- In a large bowl mash the sweet potato and add the oats and flour and sugar and mix well, add your eggs and milk and incorporate well.
- Using a ladle scoop one ladle full into a hot pan and lower the heat to allow the pancakes to rise before turning.
- Do this until all the pancake batter is finished. Allow to cool and serve.
