Sweet Potato Pudding

  • Serves: 5 people
  • Prep Time: 45minutes



  1. In a pot heat 2 tablespoons of butter and add the sweet potatoes, fry them till slightly browned, add your sugar and almonds and fry for 15 minutes.
  2. Add your milk and coconut essence and cinnamon.
  3. Cover and allow to cook for 35 minutes until soft and cooked through, using your wooden spoon slightly crush the sweet potatoes.
  4. When serving sprinkle the digestives over the pudding and serve with vanilla ice cream.
