- In a pot heat 2 tablespoons of butter and add the sweet potatoes, fry them till slightly browned, add your sugar and almonds and fry for 15 minutes.
- Add your milk and coconut essence and cinnamon.
- Cover and allow to cook for 35 minutes until soft and cooked through, using your wooden spoon slightly crush the sweet potatoes.
- When serving sprinkle the digestives over the pudding and serve with vanilla ice cream.
