Veg Chicken Curry

  • Serves: 2 People
  • Prep Time: 40 minutes



  1. in a large pan heat the coconut oil, season your pan lightly and place your chicken thighs skin side down and cook until browned, do the same to the other side
  2. Take them out and set aside, add your onions and pan-fry until slightly aromatic. Add your garlic ,ginger paste and spices then cook until slightly browned.
  3. Shortly after, add your coconut milk and return your chicken thighs .Allow to cook through, turning frequently.
  4. Once cooked add your assorted veg and green capsicum and allow to cook very shortly, before serving.
