- in a large pan heat the coconut oil, season your pan lightly and place your chicken thighs skin side down and cook until browned, do the same to the other side
- Take them out and set aside, add your onions and pan-fry until slightly aromatic. Add your garlic ,ginger paste and spices then cook until slightly browned.
- Shortly after, add your coconut milk and return your chicken thighs .Allow to cook through, turning frequently.
- Once cooked add your assorted veg and green capsicum and allow to cook very shortly, before serving.
