- In a large pan heat the oil and panfry your onions, until translucent and slightly browning, add your spices and Dijon mustard, toast lightly for 7 minutes.
- Add your sweet corn, tomatoes and chickpeas and mix evenly, add your water and allow to cook down lightly.
- Add your potatoes and baked beans, and allow to cook and potatoes have softened.
- Add your assorted veg and allow to cook for 5 minutes, just before serving add your spinach and allow to wilt. Then serve.
