Vegetable Casserole

  • Serves: 4 people
  • Prep Time: 45 minutes



  1. In a large pan heat the oil and panfry your onions, until translucent and slightly browning, add your spices and Dijon mustard, toast lightly for 7 minutes.
  2. Add your sweet corn, tomatoes and chickpeas and mix evenly, add your water and allow to cook down lightly.
  3. Add your potatoes and baked beans, and allow to cook and potatoes have softened.
  4. Add your assorted veg and allow to cook for 5 minutes, just before serving add your spinach and allow to wilt. Then serve.
