Vegetable Lasagna

  • Prep Time: 1 hour 35 minutes



  1. Heat a quarter cup of oil in a hot pan and cook down the peppers until they begin to brown
  2. Add the onions and cook until translucent
  3. Add the garlic and the tomato paste then cook for 3 minutes
  4. Add the rest of the vegetables and cook until wilted and fully cooked
  5. Add tomato water and cook for another 15 minutes, then set aside
  7. Melt the two tablespoons of butter and season with salt and black pepper
  8. Slightly pan fry the garlic and mustard
  9. Add the flour and cook it on low heat for about 10 minutes or until a cookie smell begins to linger
  10. Add the milk cold and mix until slightly thickened set aside
  11. Begin layering the lasgna
  12. At the base put some of the white sauce and start with the lasagna sheets then the cook vegetables and cover with cheese
  13. Repeat the process till done.
  14. Bake for 45 minutes.
