- Boil lentils until soft ensuring the water doesn't finish, leaving one cup of water
- In a small pot heat 1/4 cup of oil and cook the onions the spices and the tomato paste and add it into the lentils.
- Add the coconut milk and allow to boil for 20 minutes. Allow to rest for 4 hours.
- Add coriander after reheating and serving.
- Serve hot.
