Yellow lentil Curry

  • Serves: 5 people
  • Prep Time: 45 minutes



  1. Boil lentils until soft ensuring the water doesn't finish, leaving one cup of water
  2. In a small pot heat 1/4 cup of oil and cook the onions the spices and the tomato paste and add it into the lentils.
  3. Add the coconut milk and allow to boil for 20 minutes. Allow to rest for 4 hours.
  4. Add coriander after reheating and serving.
  5. Serve hot.
