Yellow Thai Veg Curry

  • Serves: 2 people
  • Prep Time: 30 minutes



  1. In a large pan heat 3 tablespoons of coconut oil and fry your onions until slightly browned, add your garlic paste and cook for about 1 minute.
  2. Shortly after add your capsicums and cook for 5 minutes, add your yellow curry paste and cook for another 5 minutes.
  3. Add water and coconut milk then bring to boil before adding your broccoli and cauliflower.
  4. Cook for about 10 minutes before adding your baby spinach and serve immediately.
