- In a large sauce pan melt your ghee and cook your onions until slightly browned, add your garlic paste and cook until aromatic.
- Add your spices and lower the heat and cook until aromatic.
- Add your blended tomatoes, and cook down shortly after add your coconut milk.
- Add your red capsicum and mushrooms and the 1 cup of water and mix through.
- Bring to the boil and allow to simmer, serve hot with rice.,
