Zucchini Cake

  1. Grate about 2 medium zucchini to make 3 cups. Don't squeeze out the zucchini juice.
  2. Add regular sugar, cinnamon, baking soda, salt, 4 eggs and oil in a medium bowl. Stir to combine.
  3. Add the wet ingredients into the dry and mix until combined.
  4. Pour the batter into the prepared baking pan.
  5. Place in the oven and let it bake for about 1 hour to 1 hour 5 minutes at 180 degrees.
  6. Remove and allow to cool before serving.
