- Prep Time: 1 hour 35 minutes
- Grate about 2 medium zucchini to make 3 cups. Don't squeeze out the zucchini juice.
- Add regular sugar, cinnamon, baking soda, salt, 4 eggs and oil in a medium bowl. Stir to combine.
- Add the wet ingredients into the dry and mix until combined.
- Pour the batter into the prepared baking pan.
- Place in the oven and let it bake for about 1 hour to 1 hour 5 minutes at 180 degrees.
- Remove and allow to cool before serving.
